What are the bruises on my Mao Shan Wang?

One of the most frequently asked question is, “Why are there bruises on my Mao Shan Wang?” Fret not, as we are here to share some unheard-off facts with you! Here are a few reasons why bruises on Mao Shan Wang durians can sometimes lead to a more intense, bitter flavor, and here's why:

Bruised Durians are actually highly sought after when it comes to some of our regular customers that are seasoned durian consumers that loves bitter!

1. Increased Ripeness and Fermentation

  • Natural Fermentation: When a durian bruises, the affected area softens and may start to ferment more quickly than the rest of the fruit. This fermentation can intensify the bitterness of the flesh, which is why bruised areas may taste more bitter.

2. Bitterness

  • Bitterness: When the flesh is bruised or exposed to air, oxidation occurs, which can alter the flavor profile and lead to a bitter taste. This process is similar to how certain fruits darken and develop a stronger taste when bruised.

3. Impact of Bitter Taste on Safety

  • Taste vs. Spoilage: The bitterness itself does not necessarily mean the fruit is unsafe to eat. Mao Shan Wang is naturally somewhat bittersweet, so a bruise can amplify this bitterness. If the flesh is only slightly bruised and still smells normal, it is generally safe to eat.

  • Signs of Spoilage: However, if the bruise has caused a mushy texture, dark discoloration, or a sour or off smell, the fruit might be spoiling, which would make it unsafe to consume. 4. Should You Eat Bruised Mao Shan Wang Durian?

  • Small, Fresh Bruises: A minor bruise without any off-putting smell or excessive mushiness is safe to eat, although the taste might be more bitter than the unbruised flesh.

  • Extensive Bruising or Sour Smell: If the bruising is widespread, very soft, or accompanied by a sour smell, it’s better to avoid that part, as it could indicate spoilage.

So, slight bruising with some bitterness is typically safe, but large, mushy, or sour-smelling bruises are best avoided and we will never offer any sour/spoilt durians to our customers. Hence, we are confident enough to have a policy that provides 100% Replacement in any of the above case.
